Our executive Chef only uses the finest and freshest ingredients available and prepares everything from scratch.

That's why we are extremely accommodating and can remove or substitute any element of our recipes and adapt our preparation methods to suit our guests' tastes, special diets, or allergies.

We can even prepare dishes that are not on our menu.

Oui Travel! PC's Chef is also the founder & manager of the company and personally ensures the highest standards of quality & hygiene are upheld at any given time.

Now a quick word about our Chef's pedigree...

Alexis attended the Paul Bocuse Institute in Lyon, the French capital of gastronomy, before working for several years in Parisian Michelin-starred kitchens.

He then swapped his apron for a suit. He spent many years serving as Food & Beverage Manager for several hotels in Southeast Asia before managing a boutique diving resort on a tiny remote island of the Philippines.

In 2018, he moved to the Caribbean and served as the General Manager of an award-winning restaurant in St Maarten. He finally dropped his anchor for good in 2020 in the Dominican Republic.

He started devising Oui Dive! RD in June 2024 after having worked for several years for one of the largest diving & excursion operators in the Caribbean and now happily spends his time sharing his passions and main areas of expertise with our guests, cooking, scuba diving, and delivering an exceptional service.

All our meat products are imported and either organic, free range, or grass-fed only, always free from GMOs, and never industrially farmed. Our seafood is wild-caught and sustainably fished.
